Now isn't this lovely! It's a snapshot my step-dad Dave took of the Almond Apricot Bundt Cake I posted about on Sunday. Nice. Makes me wish I hadn't left the whole cake with them...

No, not fresh apricots, but they should be given the lovely summer fruit available this year.
In fact, they are partially rehydrated, Harvest Bay brand apricots. Super yummy and moist, and perfect for baking.
