This is my ancient Microplane grater that I used to obtain the lemon zest. I used lemon instead of the orange because I didn't have any oranges, albeit I do now have Pensey's dried orange peel, but that's for a later post.
Among the many substitutions I made were flax meal instead of the freshly ground flax seeds (I don't have a coffee grinder or mortar and pestle); agave nectar for maple syrup; rice dream (shown here) instead of buttermilk; lemon juice for orange juice; vanilla paste for vanilla extract; and no raw sugar on top.
