For this evening's dessert, I had originally planned to make another of the cakes from Vegan with a Vengeance, but this recipe for coconut cupcakes looked a lot easier and I had most of the ingredients already. The frosting was a bit of a challenge, though since I don't use sugar any more, and I'm using agave nectar. As you will see from the next few photos, it all worked out well in the end.
